Apple Pumpkin Muffins

Delightful spiced apple pumpkin muffins perfect for any fall occasion.

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 2 large eggs
  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1 cup peeled diced apple

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prep a muffin tin by greasing it or lining it with paper liners.
  3. Mix the flour, baking soda, baking powder, salt, and pumpkin pie spice in a large bowl.
  4. Combine the eggs, pumpkin puree, brown sugar, vegetable oil, milk, and vanilla extract in another bowl.
  5. Fold the dry mixture into the wet mixture until just combined.
  6. Add the diced apples and gently fold them into the batter.
  7. Spoon the batter into the muffin cups, filling them about 2/3 full.
  8. Bake for 18-22 minutes until a toothpick comes out clean.
  9. Cool in the tin for a few minutes, then transfer to a wire rack to cool completely.

Notes

For a gluten-free version, use a 1:1 gluten-free flour blend. You can also add nuts or chocolate chips for variety.
