Nutella Stuffed Pumpkin Muffins

  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 2 large eggs
  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1/2 cup chocolate hazelnut spread (e.g., Nutella)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the muffin tin with liners or grease it.
  3. Mix the dry ingredients: flour, baking soda, baking powder, salt, and pumpkin pie spice in a large bowl.
  4. Beat the eggs, then add pumpkin puree, brown sugar, vegetable oil, milk, and vanilla extract in another bowl.
  5. Combine the wet and dry mixtures gently.
  6. Fill each muffin cavity halfway with batter, add a spoonful of Nutella, then top off with more batter.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Let them cool in the pan for a few minutes before transferring to a wire rack.

Notes

For an extra touch, drizzle melted Nutella over muffins before serving.
