Instructions

  1. Prep Your Ingredients: Start by gathering all your beautiful ingredients and prepping them accordingly.
  2. Cook the Corn: If using fresh corn, boil or grill it, then cool and cut the kernels off.
  3. Mix the Base: Combine diced avocados, sweet corn, halved tomatoes, and red onion in a bowl.
  4. Dress It Up: Drizzle with olive oil, lime juice, and season with salt and pepper, mixing gently.

Notes

To prevent browning, squeeze lime juice over cut avocados and store airtight in the fridge. Add avocados just before serving if storing leftovers.
