  • 1 cup corn (fresh, frozen, or canned)
  • 1 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by chopping the red onion, dicing the red bell pepper, and getting the ripe avocados ready.
  2. Combine the diced avocados, corn, red bell pepper, red onion, and chopped cilantro in a large mixing bowl.
  3. Whisk together the lime juice, olive oil, salt, and pepper in a small bowl.
  4. Dress the salad by pouring the dressing over the mixture and tossing gently to coat.
  5. Taste and adjust the seasoning if necessary.
