Avocado-Lime Slaw

A vibrant and crunchy slaw bursting with flavors, perfect for barbecues and as a topping for tacos and burgers.

  • ½ cup mayonnaise
  • 1 avocado (pit and skin removed, sliced in half)
  • ½ cup cilantro (roughly chopped)
  • 2 cloves garlic (minced)
  • 3 tbsp lime juice (fresh)
  • 1 jalapeno (seeded and finely chopped)
  • ½ tsp Kosher salt
  • ¼ tsp black pepper (freshly ground)
  • 12 oz slaw mix

Instructions

  1. Prepare Your Avocado: Start by slicing your avocado in half, removing the pit, and carefully spooning it into a bowl. Don’t forget to scoop the green goodness out gently to avoid mashing it too much!
  2. Mash Up the Avocado: Using a fork, mash the avocado until you reach a smooth and creamy consistency, leaving a few small chunks for texture.
  3. Mix in the Dressing: In the same bowl, add the mayonnaise, chopped cilantro, minced garlic, lime juice, chopped jalapeno, Kosher salt, and freshly ground black pepper. Stir until everything is incorporated and the mixture is smooth.
  4. Combine with the Slaw Mix: Now it’s time to blend your dressed avocado mixture with the slaw mix. Gently fold in the slaw until everything is coated.
  5. Chill and Serve: Cover the bowl with plastic wrap or a lid, and let it chill in the refrigerator for about 30 minutes.

Notes

This slaw is perfect as a side for grilled meats, tacos, or even on top of burgers. You can make it a day ahead and it keeps well in an airtight container for 3-4 days.
