Crunchy Table’s Avocado Salad with Lime Cilantro Dressing

  • 1 cup cherry tomatoes, halved
  • 1 small red onion, finely chopped
  • 1 cucumber, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional toppings: toasted pumpkin seeds or nuts

Instructions

  1. Prepare your ingredients: Wash all veggies, halve cherry tomatoes, chop onion, and dice cucumber.
  2. Slice the avocados: Cut in half, remove pit, and scoop out flesh into a bowl.
  3. Squeeze the limes: Roll on counter, cut in half, and squeeze juice over avocados.
  4. Mix it up: Add chopped cilantro, red onion, cucumber, and tomatoes to the bowl, mixing gently.
  5. Drizzle and season: Whisk lime juice, olive oil, salt, and pepper together, then drizzle over the salad.
  6. Serve or chill: You can serve immediately or let chill in the fridge for 30 minutes.
  7. Top it off: Sprinkle with toasted pumpkin seeds or nuts before serving.

Notes

For the best flavor, serve fresh, but if making ahead, add more lime juice before serving to restore vibrancy.
