Baked Sushi Lasagna

A delicious fusion of comforting Italian lasagna and fresh sushi, layer upon layer of gooey cream cheese, flaky salmon, and sticky sushi rice baked to perfection!

Ingredients

  • 1 ½ cups sushi rice
  • 2 cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • Salt to taste
  • 1 cup cream cheese
  • 8 ounces salmon (fresh or smoked)
  • 2 sheets nori
  • Olive oil for greasing

Instructions

  1. Prepare the Sushi Rice: Rinse sushi rice under cold water until clear, then soak for 30 minutes. Cook rice with water, bring to boil, then cover and simmer for 18 minutes. Let stand for 10 minutes.
  2. Mix in rice vinegar, sugar, and salt into warm rice.
  3. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  4. Press half of the sushi rice into the bottom of the dish.
  5. Spread 1 cup of cream cheese over the rice, optionally mix in scallions or herbs.
  6. Distribute 8 ounces of salmon evenly over the cream cheese.
  7. Place 2 sheets of nori over the salmon.
  8. Repeat layers with remaining sushi rice, cream cheese, salmon, and last sheets of nori.
  9. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes.
  10. Cool for 10 minutes before cutting into squares and serving with soy sauce, wasabi, and pickled ginger.

Notes

For extra crunch, broil for 2-3 minutes after baking. Enjoy with various toppings like toasted sesame seeds and green onions.
