BBQ Cornbread Pizza

A delicious fusion of BBQ flavors and crispy cornbread, topped with smoky chicken and gooey cheese.

  • 1 cup cornmeal
  • 1 cup all-purpose flour (or gluten-free blend)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/3 cup sugar
  • 1 large egg
  • 1/4 cup melted butter
  • 2 cups shredded BBQ chicken
  • 1/2 cup BBQ sauce
  • 1 cup cheese (cheddar or mozzarella)
  • Toppings (red onion, jalapeños, cilantro, etc.)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine cornmeal, flour, baking powder, salt, milk, sugar, egg, and melted butter in a mixing bowl until well mixed.
  3. Grease a pizza pan or cast iron skillet and pour in the cornbread batter. Spread evenly.
  4. Bake for 20-25 minutes until golden brown.
  5. Shred the cooked chicken and mix it with BBQ sauce until well coated.
  6. Spread a layer of BBQ sauce on the baked cornbread, then top with BBQ chicken and cheese.
  7. Bake again for 10-15 minutes until the cheese is melted.
  8. Garnish with cilantro and let cool slightly before serving.

Notes

Feel free to switch up the toppings or make it vegetarian by using roasted veggies instead of chicken.
