Pumpkin Crumb Muffins

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 2 large eggs
  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • For the Crumb Topping:
  • 1/2 cup flour
  • 1/3 cup brown sugar
  • 4 tbsp cold butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a muffin tin by greasing it or lining it with paper liners.
  3. Mix together the flour, baking soda, baking powder, salt, and pumpkin pie spice in a large bowl.
  4. Beat the eggs in another bowl and stir in the pumpkin puree, brown sugar, vegetable oil, milk, and vanilla extract until well combined.
  5. Fold the wet ingredients into the dry ingredients until just combined.
  6. Mix the crumb topping ingredients together in a small bowl until it resembles coarse crumbs.
  7. Scoop the muffin batter into each cup, filling about 2/3 full and sprinkle the crumb topping on each muffin.
  8. Bake for 18–20 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan for about 5 minutes before transferring to a wire rack.

Notes

Enjoy warm with a pat of butter or drizzle of honey. Muffins can be frozen for quick treats later.
