Garlic Rosemary Focaccia Muffins

A cozy take on traditional focaccia, these Garlic Rosemary Focaccia Muffins are fluffy, crunchy, and infused with garlic and rosemary flavors.

  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 packet instant yeast (about 2¼ teaspoons)
  • 1 teaspoon salt
  • ¾ cup warm water (about 110°F/43°C)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon flaky sea salt
  • Cooking spray or muffin liners

Instructions

  1. Activate the yeast: In a small bowl, combine the warm water, sugar, and yeast. Stir gently and let it sit for about 5-10 minutes, or until it’s frothy.
  2. Mix the dry ingredients: In a large mixing bowl, whisk together the flour and salt.
  3. Combine wet and dry ingredients: Make a well in the center of the flour mixture and pour in the activated yeast mixture, followed by the olive oil, minced garlic, and chopped rosemary. Stir until a shaggy dough forms.
  4. Let it rise: Cover the bowl and let it rise in a warm area for about 60 minutes or until it has doubled in size.
  5. Preheat and prepare muffin tin: Preheat your oven to 375°F (190°C). Grease your muffin tin.
  6. Fill muffin tins: Once the dough has risen, divide it evenly into the muffin cups, filling them about ¾ full.
  7. Top it off: Sprinkle flaky sea salt on top of each muffin.
  8. Bake: Slide the muffins into the oven and bake for about 18-20 minutes or until golden brown.
  9. Cool and enjoy: Let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack.

Notes

These muffins can be stored in an airtight container at room temperature for a day or two, or frozen for longer storage.
