Bruschetta Rice Bake

A delightful twist on classic bruschetta, this Bruschetta Rice Bake combines the flavors of fresh tomatoes, basil, and mozzarella in a crunchy baked dish.

Ingredients

  • 2 cups cooked rice (any variety)
  • 2 cups diced fresh tomatoes
  • 1 cup fresh mozzarella, diced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Optional toppings: panko breadcrumbs or crushed croutons

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the rice if not cooked; place in a large mixing bowl.
  3. Mix together the diced tomatoes, mozzarella, basil, balsamic vinegar, and olive oil, seasoning with salt and pepper.
  4. Transfer the mixture to a greased baking dish and spread evenly.
  5. Top with panko breadcrumbs or crushed croutons if desired.
  6. Bake for 25-30 minutes or until the top is golden brown and the cheese is melted.
  7. Serve warm, garnished with extra basil and balsamic vinegar.

Notes

Day-old rice works best for texture. Feel free to add protein or other vegetables as desired.
