Crockpot Buffalo Chicken Soup

A hearty, flavor-packed buffalo chicken soup that balances zingy buffalo sauce with creamy goodness and hearty ingredients.

  • 2 lbs boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1/2 cup buffalo sauce
  • 8 oz cream cheese
  • 1 cup sharp cheddar cheese
  • 2 celery stalks, diced

Instructions

  1. Prepare the chicken: Place your chicken breasts at the bottom of the crockpot.
  2. Add the chicken broth over the chicken.
  3. In goes the buffalo sauce!
  4. Plop your cream cheese directly on top of the chicken.
  5. Chop your celery stalks and toss them in.
  6. Set the crockpot on low for 360 minutes or on high for 240 minutes.
  7. When the cooking is complete, shred the chicken right in the pot.
  8. Stir in the cheddar cheese until it melts into the soup.

Notes

For a thicker soup, mix a tablespoon of cornstarch with water and stir it in towards the end of cooking. You can also freeze the soup in batches for busy days.
