Cajun Salmon Meal Prep

A vibrant and flavorful meal prep recipe featuring Cajun seasoned salmon, roasted sweet potatoes, and sautéed asparagus, perfect for busy days.

  • 2 lbs salmon fillets
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 2 cups roasted sweet potatoes
  • 2 cups asparagus

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and dice the sweet potatoes into bite-sized cubes.
  3. Toss the sweet potatoes in olive oil, salt, and a hint of cinnamon.
  4. Spread them onto a baking sheet lined with parchment paper.
  5. Roast for about 20-25 minutes, tossing halfway through.
  6. Pat the salmon fillets dry with a paper towel.
  7. Drizzle olive oil on both sides of the salmon and rub Cajun seasoning generously.
  8. Heat a bit of olive oil in a large nonstick skillet over medium-high heat.
  9. Place the salmon fillets skin-side down in the skillet and sear for about 4-5 minutes.
  10. Carefully flip the salmon and add the asparagus to the skillet.
  11. Cook for another 4-5 minutes, or until asparagus is tender and salmon is cooked through.
  12. Assemble your meal prep containers starting with a base of sweet potatoes.
  13. Add the Cajun salmon on top, then the asparagus.
  14. Consider sprinkling some chopped nuts or seeds for an extra crunch.

Notes

These meal prep containers can be stored in the fridge for up to 4 days and reheated easily. A squeeze of fresh lemon juice enhances the flavors.
