Cajun Shrimp Potato Bowls

A flavorful blend of sautéed shrimp and crispy potatoes, seasoned with Cajun spices for a delightful crunch and zest.

  • 1 lb shrimp (fresh or frozen, thawed)
  • 4 medium Yukon gold potatoes (or sweet potatoes/russets)
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil (extra virgin)
  • 1 lemon (for juicing)
  • Fresh parsley (for garnish)

Instructions

  1. Prep the potatoes: Rinse and chop into bite-sized cubes.
  2. Boil the potatoes in salted water for 10-15 minutes until fork-tender, then drain.
  3. Preheat the oven to 425°F (220°C), toss boiled potatoes with olive oil and Cajun seasoning.
  4. Roast the potatoes for 20-25 minutes until golden, flipping halfway through.
  5. Sauté the shrimp in pan with olive oil over medium-high heat for 3-5 minutes until pink.
  6. Finish by squeezing fresh lemon juice over the shrimp.

Notes

For extra flavor, consider adding garlic during the last minute of cooking shrimp. Serve with lemon wedges and your favorite hot sauce.
