  • 1 cup cooked chicken, diced
  • 4 strips bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 1 cup sweet corn (canned or cooked)
  • 1/2 red onion, diced
  • 1 avocado, diced
  • 1/2 cup ranch dressing
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Boil a pot of salted water and add your rotini pasta. Cook according to the package instructions until al dente (about 8-10 minutes).
  2. Fry up the bacon in a skillet over medium heat until crispy. Let it cool slightly before crumbling it into bite-sized pieces.
  3. Combine the diced chicken, halved cherry tomatoes, sweet corn, diced red onion, and avocado in a large mixing bowl.
  4. Add the cooled pasta to your mixing bowl and toss to combine before adding the crumbled bacon.
  5. Pour in the ranch dressing, season with salt and pepper, and mix until the pasta is evenly coated.
