  • 2 organic chicken breasts
  • 23 heads of romaine lettuce, chopped
  • 3 tablespoons hemp seeds
  • 1 tablespoon avocado oil
  • Sea salt and ground pepper
  • 1/2 teaspoon garlic powder
  • 1/4 cup SideDish Classic Ranch dressing
  • 2 tablespoons fresh, chopped parsley
  • 3 slices cooked, pasture-raised bacon

Instructions

  1. Cook the chicken by seasoning with sea salt, ground pepper, and garlic powder. Heat avocado oil in a skillet over medium heat and add the chicken breasts. Cook for 6-7 minutes on each side until cooked through.
  2. Prep the greens by chopping the romaine lettuce into bite-sized pieces.
  3. Assemble the salad in a large mixing bowl, combining the chopped romaine, hemp seeds, and parsley.
  4. Chop the crispy bacon into small pieces and add it to the greens.
  5. Slice the rested chicken against the grain into strips and place it on top of the salad mix. Drizzle with ranch dressing.
  6. Toss everything together gently until the dressing coats all ingredients evenly and serve in individual bowls or on a platter.

Notes

This salad can be prepped ahead of time. Keep the dressing separate until serving to avoid sogginess.
