Chicken Gyro Flatbread

A delicious and fresh chicken gyro flatbread filled with savory chicken, crunchy veggies, and creamy tzatziki sauce.

Ingredients

  • Flatbread (pita, lavash, or homemade)
  • Boneless, skinless chicken breasts
  • Tzatziki Sauce (Greek yogurt, cucumber, garlic, and herbs)
  • Cucumbers (or shredded carrots, or radishes)
  • Olive oil
  • Lemon juice
  • Minced garlic
  • Salt
  • Pepper
  • Herbs (oregano or thyme)
  • Additional toppings (lettuce, tomato, red onion)
  • Feta cheese (optional)

Instructions

  1. Marinate the chicken by mixing olive oil, lemon juice, minced garlic, salt, pepper, and herbs in a bowl. Add the chicken and coat well. Let it marinate for at least 30 minutes or overnight.
  2. Cook the marinated chicken in a skillet over medium-high heat for about 6-8 minutes per side until it reaches 165°F. Let it rest before slicing thinly.
  3. Prepare the tzatziki by mixing Greek yogurt, grated cucumber, minced garlic, lemon juice, fresh dill, salt, and pepper in a bowl. Adjust seasoning as needed.
  4. Build your flatbread by spreading tzatziki, layering with sliced chicken and cucumber, and other toppings as desired.
  5. Roll it up or fold it over based on the type of flatbread. Optionally grill it in the skillet for a golden exterior.
