A delightful blend of crunchy churros and rich cheesecake, these Churro Cheesecake Bars will bring back sweet childhood memories in every bite.

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 teaspoon cinnamon
  • 1/2 cup sour cream
  • 1/4 cup sugar (for topping)
  • 1 tablespoon cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Make the graham cracker crust by mixing 1 cup of graham cracker crumbs, 1/4 cup of sugar, and 1/2 cup of melted butter.
  3. Press the mixture into a greased 9×9-inch baking pan.
  4. Beat together the cream cheese and 1 cup of sugar until smooth and creamy.
  5. Add the vanilla extract, eggs, cinnamon, and sour cream; mix until well combined.
  6. Pour the cheesecake mixture over the crust and spread evenly.
  7. Bake for 30-35 minutes until the edges are set with a slightly jiggly center.
  8. Mix together the topping ingredients: 1/4 cup of sugar and 1 tablespoon of cinnamon.
  9. Cool the cheesecake for 30 minutes, then refrigerate for at least 2 hours before slicing into bars.
  10. Sprinkle the cinnamon sugar mixture on top before serving.

Notes

Serve with fresh berries or a dollop of whipped cream. Consider drizzling with caramel or chocolate sauce for a fun twist.
