A decadent cheesecake with the rich flavors of churros, featuring a creamy filling and a crunchy graham cracker crust.

Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 1/4 cup sugar
  • 2 (8-ounce) packages cream cheese, softened
  • 3/4 cup sugar
  • 2 eggs
  • 1 tablespoon cinnamon

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix the graham cracker crumbs, melted butter, and 1/4 cup of sugar together until it looks like wet sand. Press into the bottom of a 9-inch springform pan.
  3. Beat the softened cream cheese until smooth and creamy, about 2-3 minutes.
  4. Add the 3/4 cup of sugar and the eggs to the bowl, beating well after each addition.
  5. Stir in the tablespoon of cinnamon until well combined.
  6. Pour the cheesecake filling over the prepared crust and smooth the top with a spatula.
  7. Bake in the preheated oven for about 50-60 minutes, or until the edges are set but the center is still slightly wobbly.
  8. Cool inside the oven for 1 hour, then refrigerate for at least 4 hours or overnight.
  9. Serve with additional cinnamon-sugar or whipped cream on top.
