Cowboy Butter Shrimp Rice Bowls

  • 1 pound shrimp, peeled and deveined
  • 2 cups rice, cooked
  • 1/2 cup Cowboy Butter
  • Fresh parsley, for garnish
  • Lemon wedges, for serving

Instructions

  1. Prepare your rice according to the package instructions or cook in low-sodium chicken broth.
  2. Whip up the Cowboy Butter by combining melted butter, minced garlic, chopped parsley, paprika, and cayenne pepper in a bowl.
  3. Sauté the shrimp in a skillet with oil for 5-7 minutes, adding half of your Cowboy Butter mixture halfway through.
  4. Toss the shrimp in the remaining Cowboy Butter before serving over fluffy rice.
  5. Garnish with parsley and serve with lemon wedges on the side.

Notes

For a twist, try substituting shrimp with scallops or chicken. You can also enhance the Cowboy Butter with lemon zest.
