Creamy Avocado Coleslaw

A fresh and vibrant twist on classic coleslaw with creamy avocado and zesty lime.

Ingredients

  • 2 cups shredded cabbage (green, purple, or a mix)
  • ½ cup chopped fresh cilantro
  • 1 small avocado
  • ¼ cup Greek yogurt or sour cream
  • 1 tbsp mayonnaise (optional)
  • Zest and juice of 1 lime
  • 1 clove garlic (minced)
  • ½ tsp honey
  • Salt and pepper to taste

Instructions

  1. Prepare your produce: Shred the cabbage and chop the cilantro.
  2. Make the creamy dressing: Scoop avocado into a bowl, add yogurt, lime zest, lime juice, garlic, honey, and salt and pepper. Smash until creamy.
  3. Mix it up: Combine shredded cabbage and cilantro in a bowl, pour dressing over and toss.
  4. Taste and adjust: Adjust seasoning with more salt or lime juice as necessary.
  5. Chill out: Refrigerate the coleslaw for at least 30 minutes.
  6. Serve and enjoy: Toss again before serving and enjoy with your favorite meals.
