Creamy Avocado Coleslaw

A fresh, zingy twist on classic coleslaw featuring creamy avocado and vibrant flavors, perfect for summer barbecues.

  • 2 cups shredded cabbage (green, purple, or a mix)
  • ½ cup chopped fresh cilantro
  • 1 small avocado
  • ¼ cup Greek yogurt or sour cream
  • 1 tbsp mayonnaise (optional)
  • Zest and juice of 1 lime
  • 1 clove garlic (minced)
  • ½ tsp honey
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Wash and shred the cabbage. Leave it aside.
  2. Chop the herbs and avocado: Finely chop cilantro, slice the avocado, scoop, and mash until creamy.
  3. Make the dressing: In the bowl with mashed avocado, mix Greek yogurt, mayo, lime zest, juice, garlic, honey, salt, and pepper.
  4. Combine everything: Add cabbage and cilantro to the dressing and toss until well coated.
  5. Taste and adjust seasoning as needed.
  6. Chill the coleslaw in the fridge for about 30 minutes before serving.

Notes

This dish is best served chilled and can be made in advance. Substitute dairy ingredients for vegan options as needed.
