Instructions

  1. Prep the Corn: Husk the cobs and remove the kernels. If using frozen corn, thaw it first.
  2. Dice the Cucumbers: Chop them into bite-sized pieces, leaving the skin on for color and extra fiber.
  3. Make the Dressing: In a bowl, whisk together Greek yogurt, mayonnaise, lemon juice, honey, salt, and pepper.
  4. Combine: In a large bowl, mix corn and cucumbers, then pour the dressing over and toss gently to coat.
  5. Chill and Serve: Let the salad chill in the fridge for at least 30 minutes to meld the flavors.
  6. Garnish and Enjoy: Adjust seasoning if needed and sprinkle fresh dill on top before serving.
