Crockpot Chicken Wild Rice Soup

A warm and comforting chicken wild rice soup perfect for chilly days, infused with nostalgic flavors.

Ingredients

  • 2 lbs Chicken Breasts, skinless and boneless
  • 1 cup Wild Rice
  • 6 cups Chicken Broth
  • 2 Carrots, diced
  • 2 Celery Stalks, diced
  • 1 Onion, diced
  • 1 cup Half-and-Half
  • Thyme, fresh or dried

Instructions

  1. Prep the chicken by placing it at the bottom of your crockpot. Season lightly with salt and pepper.
  2. Add the wild rice over the chicken.
  3. Pour in the chicken broth and stir gently.
  4. Chop the carrots, celery, and onion, then add them to the crockpot.
  5. Sprinkle in the thyme.
  6. Let the soup slow cook on low for 6-8 hours or high for 3-4 hours.
  7. Shred the chicken with two forks after cooking.
  8. Pour in the half-and-half and stir.
  9. Taste the soup and adjust seasoning as needed.

Notes

You can easily substitute chicken with leftover rotisserie chicken for a quicker version. For vegetarian, replace chicken with chickpeas and use vegetable broth.
