Creamy Cucumber Salad

A refreshing and creamy cucumber salad, perfect for summer gatherings or as a light meal.

Ingredients

  • 2 medium cucumbers, thinly sliced
  • 1 small onion, thinly sliced
  • 1 cup Greek yogurt
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 2 tablespoons fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. Wash the cucumbers. After they’re cleaned, slice them thinly (about 1/8 inch thick).
  2. Thinly slice your small onion.
  3. Combine the Greek yogurt, lemon juice, minced garlic, and fresh dill in a medium bowl.
  4. Toss the sliced cucumbers and onions with your creamy dressing in a large mixing bowl.
  5. Chill in the fridge for at least 30 minutes.
  6. Serve in a lovely bowl, garnished with extra dill or cucumber slices.

Notes

Best enjoyed fresh, but leftovers can be stored in an airtight container for 2-3 days.
