Creamy Cucumber Salad

A refreshing and creamy cucumber salad bursting with flavor and nostalgia, perfect for summer days.

Ingredients

  • 2 large cucumbers
  • 1 cup Greek yogurt
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh mint, chopped
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Prepare your cucumbers by washing thoroughly, slicing them in half lengthwise, scooping out seeds, and cutting into half-moons or cubes.
  2. Mix your creamy dressing by combining yogurt, chopped dill, chopped mint, lemon juice, salt, and pepper in a medium bowl.
  3. Add the sliced cucumbers to the bowl with the dressing and gently toss to coat.
  4. Chill the salad in the fridge for at least 30 minutes before serving.

Notes

This salad can be customized with cherry tomatoes, feta cheese, avocado slices, or a spicy kick from jalapeños. Best enjoyed fresh but can last in the fridge for 2-3 days.
