  • 8 oz cream cheese, softened
  • 1 cup diced dill pickles
  • 2 tablespoons chopped fresh chives (for garnish)
  • Salt and pepper to taste
  • Optional add-ins: Cooked bacon bits or shredded cheddar cheese

Instructions

  1. Boil your potatoes by washing them thoroughly, peeling if preferred, and cutting them into 1-inch chunks. Place them in salted boiling water until fork-tender, about 15-20 minutes.
  2. Mash the cooked potatoes in a pot until they reach your desired consistency.
  3. Mix in the softened cream cheese until well blended and creamy.
  4. Add in the diced pickles, reserving a few for garnish, and season with salt and pepper to taste.
  5. Plate the creamy potato mix into bowls and top with fresh chives and reserved pickles.
