  • 2 lbs chicken breasts
  • 6 cups chicken broth
  • 16 oz potato gnocchi
  • 2 cups spinach
  • 1 cup half-and-half
  • 2 carrots, chopped
  • 2 celery stalks, chopped

Instructions

  1. Prep the chicken by seasoning it with salt and pepper and placing it in the crockpot.
  2. Add the broth and veggies, then pour the chicken broth over the chicken and add diced carrots and celery.
  3. Let it simmer on low for 6 to 7 hours or high for 3 to 4 hours.
  4. Shred the cooked chicken into bite-sized pieces, tasting the broth for seasoning.
  5. Add the gnocchi and cook for about 30 minutes on high.
  6. Stir in the spinach and half-and-half, letting it cook for an additional 10 minutes.
