Sopapilla Cheesecake Bars

Delightful dessert bars combining creamy cheesecake filling with a crispy cinnamon-sugar crust.

  • 2 (8 oz) packages crescent rolls
  • 24 oz cream cheese (softened)
  • 1 1/4 cups white sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/4 cup unsalted butter (melted)
  • 2 teaspoons cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9×13 inch baking dish and lightly grease it with cooking spray or butter.
  3. Unroll the first package of crescent rolls and lay them flat into the baking dish, pressing the seams together.
  4. Make the cream cheese filling by beating softened cream cheese with sugar, cornstarch, vanilla extract, and egg until fluffy and well combined.
  5. Spread the cream cheese mixture evenly over the crescent roll layer.
  6. Top with the second package of crescent rolls, pressing seams together gently.
  7. Melt butter and mix with cinnamon and remaining sugar, then drizzle over the top layer of dough.
  8. Bake for 30-35 minutes, or until the top is golden and the filling is slightly puffed.
  9. Cool for about 10-15 minutes, then slice into bars.

Notes

Dust with powdered sugar and drizzle honey or maple syrup before serving. Great with fresh berries or ice cream.
