Crispy Delight: Baked Parmesan Zucchini

A delightful dish featuring baked zucchini coated in Parmesan cheese for a crunchy and savory experience.

  • 2 medium Zucchini
  • 2 tablespoons Olive Oil
  • ½ cup Parmesan Cheese, grated
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Italian Seasoning
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prep the zucchini by rinsing them and patting them dry.
  3. Slice each zucchini in half lengthwise and cut into ½-inch thick strips.
  4. Mix the coating ingredients in a bowl: Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  5. Coat the zucchini strips with olive oil, then add the cheese mixture and toss until coated.
  6. Arrange the zucchini on a lined baking sheet, cut-side up, in a single layer.
  7. Bake for 20-25 minutes, flipping halfway through until golden and fork-tender.
  8. Serve hot, optionally topped with fresh herbs or extra Parmesan.

Notes

For extra crunch, add a tablespoon of breadcrumbs to the coating mix. This dish freezes wonderfully uncooked.
