2 medium zucchinis (about 2 cups shredded)
2 large eggs
½ cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon Italian seasoning
½ teaspoon salt
¼ teaspoon black pepper
1 cup shredded mozzarella cheese (for topping)
Optional: fresh parsley or basil for garnish
Instructions
Preheat your oven to 425°F (220°C). Wash and dry the zucchinis, then grate them to get about 2 cups of shredded zucchini.
Mix the shredded zucchini, eggs, mozzarella cheese, Parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper in a large bowl until well combined.
Line a baking sheet with parchment paper and spread the zucchini mixture evenly into a rectangle shape, about half an inch thick.
Bake for about 20 minutes until golden and firm.
Sprinkle the remaining mozzarella cheese on top and return to the oven for another 10-15 minutes until melted and bubbly.
Slice into sticks and serve warm, garnished with fresh parsley or basil.
Notes
Squeeze out excess moisture from the zucchini after grating to avoid soggy breadsticks.
