Parmesan Zucchini Fries

Crispy and flavorful Parmesan Zucchini Fries, perfect for a healthy snack or appetizer.

Ingredients

  • 3 small zucchinis
  • 2 eggs
  • 1 pinch salt
  • Ground black pepper to taste
  • 2 cups Japanese panko bread crumbs
  • 1/2 cup grated Parmesan cheese
  • Ranch dressing for dipping

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dry the zucchinis. Slice them into fry-like sticks, about 1/4-inch thick.
  3. Set up your breading station with three shallow bowls: one for beaten eggs, one for panko with Parmesan, and one empty or with extra panko.
  4. Dip each zucchini stick into the egg mixture, then coat in the panko-Parmesan mix.
  5. Place the coated fries on a parchment-lined baking sheet without overlapping.
  6. Bake for 20-25 minutes, flipping halfway through until golden brown.
  7. Serve with ranch dressing or your preferred dip.

Notes

You can prepare the zucchini in advance and bake just before serving. Ensure they are well-coated to avoid sogginess.
