Instructions

  1. Prep the peaches: Start by washing your peaches thoroughly. Once dried, chop them into bite-sized pieces.
  2. Mix the dry ingredients: In a mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  3. Combine the wet ingredients: In a separate bowl, whisk the egg until frothy. Add the milk and mix until combined.
  4. Create the batter: Pour the wet mixture into the dry ingredients and stir gently. Gently fold in the chopped peaches.
  5. Heat the oil: In a heavy-bottomed pot, pour in about 2-3 inches of oil and heat it over medium heat.
  6. Fry the fritters: Using a spoon or small scoop, drop spoonfuls of batter into the hot oil. Fry for about 2-3 minutes on each side until golden brown.
  7. Dust with powdered sugar: Once they’re out of the oil, give them a light dusting with powdered sugar.
