Taco Stuffed Waffles

Taco Stuffed Waffles are a fun twist on traditional tacos, featuring fluffy waffles filled with seasoned taco beef and fresh toppings.

Ingredients

  • 1 pound ground beef (or ground turkey, chicken, or plant-based crumbles)
  • 2 tablespoons taco seasoning
  • Waffle mix or homemade waffle ingredients
  • Crisp lettuce (iceberg or romaine)
  • Shredded cheese (cheddar or Mexican blend, optional)
  • Chopped tomatoes or pico de gallo (optional)
  • Sour cream or Greek yogurt (optional)
  • Salsa (optional)

Instructions

  1. Prepare the taco beef: In a skillet over medium heat, brown the ground meat. Drain excess fat and add taco seasoning and water. Simmer for 5 minutes.
  2. Make your waffles: Preheat your waffle maker and prepare the batter. Pour into the waffle maker and cook until golden brown.
  3. Stuff the waffles: Place one waffle on a plate and add a portion of taco beef on top.
  4. Layer with fresh toppings: Add lettuce, tomatoes, cheese, sour cream, and salsa on top of the beef.
  5. Top it off with a second waffle and drizzle with more salsa or sour cream as desired.

Notes

Serve stacked high with fresh cilantro or green onions for a pop of color. Customize with extra toppings on the side.
