Zucchini Fritters

These zucchini fritters are crispy on the outside and cheesy on the inside, capturing the essence of childhood memories and delicious summer days.

  • 2 medium zucchinis, grated
  • 1 cup Parmesan cheese, grated
  • 1/2 cup Mozzarella cheese, shredded
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil, for frying

Instructions

  1. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
  2. Combine grated zucchini, Parmesan cheese, mozzarella cheese, eggs, flour, salt, pepper, and garlic powder in a large bowl.
  3. Heat the olive oil in a skillet over medium heat.
  4. Form the fritters by dropping spoonfuls of the mixture into the hot oil, flattening them slightly.
  5. Fry for about 3-4 minutes on one side until golden, then flip and cook for another 2-3 minutes.
  6. Drain on paper towels and cool slightly before serving.
  7. Serve with fresh herbs, sour cream, or lemon juice.

Notes

These fritters can be made ahead of time and stored in the fridge for up to 24 hours. Enjoy with various dips or toppings.
