Crockpot Chicken Stew

A hearty and comforting Crockpot Chicken Stew that’s perfect for busy weeknights and chilly evenings.

Ingredients

  • 2 lbs chicken thighs
  • 4 potatoes, cubed
  • 3 carrots, sliced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 tsp dried rosemary

Instructions

  1. Prepare your ingredients: Grab your veggies and chicken. Cube the potatoes, slice the carrots, and chop the onions and celery.
  2. Sear the chicken (optional): Sear the chicken thighs in a hot pan for 3-4 minutes on each side until golden brown.
  3. Layer in the crockpot: Start layering your ingredients with potatoes, followed by carrots, celery, onions, and chicken on top.
  4. Add the broth and seasonings: Pour in your chicken broth, covering all the ingredients, and sprinkle in the rosemary, salt, and pepper to taste.
  5. Cook low and slow: Cover the crockpot and set it on low for 6-8 hours or high for 4-5 hours.
  6. Serve & enjoy: Once cooked, stir the stew and serve in bowls, optionally garnished with fresh parsley.

Notes

Feel free to add garlic for extra flavor or adjust the ingredients based on what you have on hand.
