Crockpot Chicken Tortilla Soup

A warming and flavorful chicken tortilla soup made in a crockpot, perfect for weeknight dinners.

  • 2 lbs chicken breasts
  • 4 cups chicken broth
  • 1 can black beans
  • 1 cup corn
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • Tortilla strips
  • Fresh cilantro

Instructions

  1. Prepare the Chicken: Start by placing your chicken breasts in the bottom of your crockpot.
  2. Add the Goodies: Pour in the chicken broth, black beans, corn, diced tomatoes, and taco seasoning. Give it all a good stir.
  3. Set It and Forget It: Turn your crockpot on low for 6-8 hours or high for 4-6 hours.
  4. Shred That Chicken: Remove the chicken from the crockpot and shred it using two forks, then return it to the pot.
  5. Taste and Adjust: Taste your soup before serving and add salt, pepper, or extra taco seasoning as needed.
  6. Serve It Up: Ladle the soup into bowls, topping each with crispy tortilla strips and fresh cilantro.
