Crockpot White Chicken Chili

A creamy, comforting white chicken chili made in the crockpot, perfect for chilly days.

Ingredients

  • 2 lbs chicken breasts
  • 2 cans white beans (cannellini or Great Northern)
  • 1 can diced green chiles
  • 4 cups chicken broth
  • 8 oz cream cheese
  • 1 tsp cumin
  • 1 tsp oregano

Instructions

  1. Prep the chicken: Place the chicken breasts at the bottom of your crockpot.
  2. Add the beans: Drain and rinse the white beans before adding them on top of the chicken.
  3. Toss in the green chiles: Pour in the can of diced green chiles, juices and all.
  4. Pour in the broth: Add the chicken broth—this will be your chili’s base.
  5. Sprinkle in the spices: Add the cumin and oregano, stirring gently to combine.
  6. Cream cheese delight: Add the cream cheese on top and let it melt into the chili.
  7. Set and forget: Cover and cook on low for 6-8 hours or high for 3-4 hours.
  8. Shred and serve: Once done, shred the chicken in the pot and stir everything together.

Notes

Serve with chopped cilantro, lime, sour cream, and tortilla chips for added texture.
