Instructions

  1. Prepare Your Ingredients: Wash and cut your watermelon into 3/4-inch cubes. Use a melon baller to scoop avocado balls.
  2. Chop the Cucumber: Slice the cucumber in half, scoop out any seeds, and cut into thin half-moons or cubes.
  3. Scoop the Avocado: Use a melon baller or dice gently, drizzling with lime juice if making ahead.
  4. Combine Ingredients: In a large bowl, combine watermelon, cucumber, and avocado, tossing gently.
  5. Get Zesty: Whisk lime juice, olive oil, ginger, and salt in a small bowl, then pour over the salad.
