Refreshing Cucumber Dill Salad

A crunchy and refreshing salad featuring fresh cucumbers, dill, and a creamy, tangy dressing.

  • ¾ cup (150 grams) Greek yogurt or plain full-fat
  • 1 ½ tablespoon extra virgin olive oil
  • 1 ½ tablespoon lemon juice
  • ¼ teaspoon garlic, grated
  • ½ teaspoon fine salt
  • ⅕ teaspoon black pepper
  • 1 ½ lb (670 grams) cucumbers, sliced
  • ½ red onion, finely sliced
  • ¼ cup fresh dill, chopped

Instructions

  1. Prepare the dressing: In a medium mixing bowl, combine the Greek yogurt, extra virgin olive oil, lemon juice, grated garlic, salt, and black pepper.
  2. Slice the cucumbers into thin rounds. If using English cucumbers, there’s no need to peel them.
  3. Finely slice the red onion and chop the fresh dill.
  4. Combine the ingredients: In a large mixing bowl, add the sliced cucumbers, red onion, and chopped dill. Pour the dressing over the veggies and gently toss to coat everything evenly.
  5. Chill and serve: Cover the bowl and refrigerate for about 30 minutes before serving.

Notes

Serve cold for the best flavor and freshness. The salad can be paired with grilled meats or enjoyed as a light lunch.
