Dairy-Free Pumpkin Muffins

Deliciously moist and flavorful dairy-free pumpkin muffins perfect for fall.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 2 large eggs
  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup milk (or unsweetened almond milk)
  • 1 tsp vanilla extract
  • Maple syrup for brushing

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare the muffin tin.
  2. Mix the dry ingredients: flour, baking soda, baking powder, salt, and pumpkin pie spice.
  3. Whisk the wet ingredients: eggs, pumpkin puree, brown sugar, vegetable oil, milk, and vanilla extract.
  4. Combine the wet and dry ingredients until just mixed.
  5. Scoop the batter into the muffin tin and bake for 18–20 minutes.
  6. Brush with maple syrup after baking.

Notes

These muffins store well at room temperature for a few days and also freeze beautifully for up to 3 months.
