2 cups shelled edamame
2 cups cooked brown rice
2 cups shredded carrots
1 cucumber, sliced
2 tbsp sesame ginger dressing
Instructions
Cook your brown rice. If you’re using a rice cooker, follow the standard ratios. For stovetop, use a 2:1 ratio of water to rice, bring to boil, reduce heat, cover, and simmer for 40-45 minutes.
Prepare the edamame. If using frozen, boil for 3-4 minutes until heated through, then drain and rinse. If fresh, steam until tender.
Shred the carrots using a box grater or food processor until you have about 2 cups.
Slice the cucumber into thin rounds.
Assemble your bowl by layering the cooked brown rice, followed by edamame, shredded carrots, and cucumber slices.
Drizzle the sesame ginger dressing over the bowl just before serving.
