Cranberry Orange Pumpkin Muffins

These muffins bring together a fabulous fusion of sweet, tart, and spiced flavors, perfect for a cozy autumn treat.

  • 1 ¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 2 tsp pumpkin pie spice
  • 2 large eggs
  • 1 cup pumpkin puree
  • ¾ cup brown sugar
  • ½ cup vegetable oil
  • ¼ cup milk
  • 1 tsp vanilla extract
  • ¾ cup dried cranberries
  • 1 tbsp orange zest

Instructions

  1. Preheat your oven and prep the muffin tin by preheating to 350°F (175°C) and lining it with muffin liners.
  2. Mix the dry ingredients: In a large mixing bowl, whisk together the flour, baking soda, baking powder, salt, and pumpkin pie spice.
  3. Whisk the wet ingredients: In another bowl, whisk the eggs until frothy, then add the pumpkin puree, brown sugar, vegetable oil, milk, and vanilla extract.
  4. Combine wet and dry mixtures: Gradually add the dry mixture to the wet mixture and stir until just combined.
  5. Fold in cranberries and orange zest gently.
  6. Fill the muffin tin about ¾ full with the batter.
  7. Bake to perfection for about 20-25 minutes or until golden brown.
  8. Cool and enjoy after cooling in the pan for 5 minutes and transferring to a wire rack.
