Maple Pecan Pumpkin Muffins

Delightful autumn muffins filled with pumpkin, maple syrup, and crunchy pecans.

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 2 large eggs
  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1/3 cup maple syrup
  • 3/4 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a muffin tin by greasing or lining it with paper liners.
  3. Mix dry ingredients in a bowl: flour, baking soda, baking powder, salt, and pumpkin pie spice.
  4. Mix wet ingredients in another bowl: beat eggs, add pumpkin puree, brown sugar, vegetable oil, milk, vanilla extract, and maple syrup; whisk until smooth.
  5. Combine wet mixture with dry ingredients; mix gently until just combined.
  6. Fold in the chopped pecans, reserving a few for topping if desired.
  7. Spoon the batter into muffin cups, filling each about 3/4 full.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Cool muffins in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For a gluten-free version, use a 1:1 gluten-free flour blend. You can also substitute ingredients for various dietary preferences.
