Pumpkin Tiramisu Muffins

A delightful fusion of pumpkin muffins and the creamy textures of tiramisu, perfect for breakfast or dessert.

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 2 large eggs
  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1 tsp instant espresso powder
  • 8 oz mascarpone cheese
  • 2 tbsp powdered sugar
  • 1 tbsp cocoa powder

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it.
  2. Combine the flour, baking soda, baking powder, salt, and pumpkin pie spice in a medium bowl.
  3. Mix the eggs, pumpkin puree, brown sugar, vegetable oil, milk, and vanilla extract in a large mixing bowl until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  5. Add the instant espresso powder and fold it into the batter.
  6. Bake the muffins for 18-22 minutes or until a toothpick comes out clean.
  7. Prepare the mascarpone filling by beating mascarpone cheese and powdered sugar until smooth.
  8. Cool the muffins for about 10 minutes, then fill with mascarpone filling.
  9. Dust the tops with cocoa powder before serving.

Notes

These muffins can be made ahead and stored. They freeze beautifully, just ensure they are cooled before wrapping.
