Fire Roasted Taco Orzo

A vibrant and flavorful twist on traditional tacos, packed with orzo, ground beef, fire-roasted tomatoes, and fresh cilantro, making every bite a fiesta.

  • 1 cup Orzo
  • 1 lb Ground Beef
  • 1 can (14.5 oz) Fire Roasted Tomatoes
  • 2 tbsp Taco Seasoning
  • 1/4 cup Fresh Cilantro, chopped
  • 2 Lime Wedges
  • Salt, to taste
  • Pepper, to taste
  • Olive Oil, for sautéing

Instructions

  1. Cook the Orzo: Bring a medium saucepan of salted water to a boil. Add the orzo and cook according to package instructions until al dente (about 7-9 minutes).
  2. Sauté the Beef: In a large skillet over medium heat, add a splash of olive oil. Once hot, add the ground beef and break it up as it cooks. Season with salt and pepper.
  3. Add the Flavor: Once the beef is browned, stir in the taco seasoning, then pour in the fire-roasted tomatoes (juice and all) and simmer for about 5 minutes.
  4. Combine: Drain the cooked orzo and add it into the skillet with the beef and tomato mixture. Stir to combine and heat through for about 2-3 minutes.
  5. Finishing Touches: Stir in cilantro and squeeze in the juice of half a lime. Adjust seasoning if necessary.

Notes

For a gluten-free option, substitute orzo with quinoa. You can also use ground turkey or lentils for a lighter version.
