Moist Pumpkin Spice Muffins

Deliciously moist pumpkin spice muffins packed with the flavors of fall, perfect for breakfast or a cozy snack.

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 2 large eggs
  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup milk (optional)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix the dry ingredients: in a large bowl, whisk together flour, baking soda, baking powder, salt, pumpkin pie spice, and ground cinnamon.
  3. Cream the sugar and eggs: in another bowl, beat the eggs and brown sugar until light and fluffy.
  4. Add the wet ingredients: mix in pumpkin puree, vegetable oil, and vanilla extract until creamy.
  5. Combine the dry & wet ingredients: gently fold the dry ingredients into the wet ingredients, being careful not to overmix.
  6. Pour in the milk and stir gently until just combined.
  7. Scoop the batter into muffin cups, filling each about 2/3 full.
  8. Bake for 18-22 minutes or until golden brown and a toothpick comes out clean.
  9. Cool in the pan for a few minutes before transferring to a wire rack.

Notes

These muffins freeze well! Cool them, place in a freezer bag, and reheat when needed. Enjoy with butter or maple syrup.
