Crunchy and Colorful Garden Salad

A vibrant and refreshing garden salad bursting with fresh produce and crunchy textures.

  • 1 tbsp apple cider vinegar
  • 3 tbsp extra virgin olive oil
  • 1/2 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 bag of leafy greens (baby kale, arugula, and spinach)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 small red onion, thinly sliced

Instructions

  1. Make the Dressing: In a small bowl, whisk together the apple cider vinegar, extra virgin olive oil, Dijon mustard, salt, and black pepper until well combined.
  2. Prep the Veggies: Rinse your leafy greens under cold water to remove any dirt or grit, then spin them dry using a salad spinner or pat them gently with a kitchen towel.
  3. Chop and Slice: Halve the cherry tomatoes, slice the cucumber, and thinly slice the red onion.
  4. Combine Ingredients: In a large mixing bowl, combine the leafy greens, cherry tomatoes, sliced cucumber, and red onion.
  5. Dress the Salad: Drizzle the dressing over the salad and gently toss until everything is well coated.
  6. Taste and Adjust: Take a moment to taste! Adjust seasoning with more salt, pepper, or even a sprinkle of lemon juice.

Notes

Feel free to experiment with different greens, and add fruits or nuts for added texture and flavor.
