Garlic Bread Enchilada Boats

A delightful twist combining gooey enchilada goodness nestled in crunchy garlic bread boats.

Ingredients

  • Garlic bread (pre-made or homemade with French bread)
  • Protein: Ground beef, shredded chicken, or black beans
  • Tortillas: Traditional corn or flour, low-carb or gluten-free if needed
  • Cheese: Shredded cheddar or Monterey Jack, or dairy-free cheese
  • Enchilada sauce: Store-bought or homemade (red or green)
  • Veggies: Diced onions, bell peppers, or spinach

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the garlic bread by slicing it in half lengthwise or spreading garlic butter over it.
  3. For extra crunch, toast the bread for 5-7 minutes.
  4. Cook the diced onions and bell peppers in a skillet until softened.
  5. Add your protein and cook until browned.
  6. Pour in the enchilada sauce and stir to combine. Simmer for 5 minutes.
  7. Assemble the filling in the garlic bread, packing it in and leaving space for cheese.
  8. Top with a generous amount of shredded cheese.
  9. Bake for 15-20 minutes, until cheese is melted and bread is golden brown.

Notes

For a crispy top, switch to broil for the last few minutes, watching closely to prevent burning. Serve with guacamole or salsa for dipping.
