Crunchy Greek-Style Chicken Salad

This Greek-Style Chicken Salad is colorful, satisfying, and features the right amount of crunch, mixing fresh vegetables with cooked chicken and a tangy dressing.

  • 500g Cooked Chicken Breast, shredded or diced
  • 60ml Olive Oil
  • 30ml Lemon Juice
  • 15ml Red Wine Vinegar
  • 5ml Dried Oregano
  • 2.5ml Garlic Powder
  • Salt & Pepper to Taste
  • 1 Medium Cucumber, Diced
  • 2 Medium Tomatoes, Diced
  • 1/4 Medium Red Onion, Thinly Sliced
  • 1/2 Cup Kalamata Olives, Pitted & Halved
  • 115g Feta Cheese, Crumbled
  • 1/4 Cup Fresh Parsley, Chopped

Instructions

  1. Prep Your Chicken by shredding or dicing it into bite-sized pieces, and cooking if necessary.
  2. Make the Dressing by whisking together olive oil, lemon juice, red wine vinegar, dried oregano, garlic powder, and season with salt and pepper.
  3. Chop the Vegetables including cucumber, tomatoes, red onion, and parsley.
  4. Assemble the Salad in a large bowl by mixing the chicken, cucumber, tomatoes, red onion, Kalamata olives, feta, and parsley with the dressing.
  5. Taste and Adjust seasoning as needed before serving.
  6. Serve with style, garnishing as desired.

Notes

Store the dressing separately until ready to eat for best freshness.
